This Nando's-Style Chicken Salad brings flavour with every bite, combining seasoned chicken, fresh veggies, and your choice of dressing! Perfect for a light meal or snack.

Ingredients:
- 500g of cubed chicken fillet
- 4 tsp Nando's Peri-Peri Seasonke all-in-1 seasoning
- ½ tsp crushed garlic (sold by CurryCheff.com)
- ½ tsp crushed red chillies (sold by CurryCheff.com)
- 1 tsp Nando’s Mild peri peri sauce.
Salad:
- 1 head of lettuce
- ½ cucumber (sliced)
- 1-2 carrots (grated or cut in julliene strips)
- A handful of green olives, pitted.
Toppings:
Greek salad dressing & Nando’s peri peri sauce to drizzle over.
Optional toppings to drizzle over: olive oil and honey.
Instructions
Step 1: Marinate the chicken with Nando’s seasoning, garlic, red chillies, and peri peri sauce.
Step 2: Cook chicken in olive oil on the stove, or grill in an air fryer or oven until golden brown.
Step 3: Prepare the salad. Wash the lettuce, chop the cucumber, and julienne or grate the carrots. Toss with olives in a large salad bowl.
Step 4: Place the cooked chicken over the salad and drizzle with additional Nando's peri peri sauce and Greek salad dressing as desired.
