Creamy Butter Chicken

Recipe:
Serves 4 - 5. 
Prep Time: 20 minutes | Cook Time: 30 minutes.

Ingredients:

For the Marinade:

  • 1 kg chicken fillet
  • ¾ cup plain yogurt
  • 1 tsp crushed garlic (available at CurryCheff.com)
  • 1 tsp turmeric
  • 2 tsp ground red chillies or chili powder (adjust to your spice preference, available at CurryCheff.com)
  • 2 tsp salt

For the Sauce:

  • 1 medium onion, chopped
  • 2 medium tomatoes, diced
  • 1 tsp crushed garlic (available at CurryCheff.com)
  • ¼ tsp garam masala
  • 1 tsp chili powder
  • 1 tsp turmeric
  • 1 tbsp tomato paste

To Finish:

  • Fresh cream (optional)
  • Fresh coriander for garnish

Instructions:

Step 1: Marinate the chicken fillet in yogurt, crushed garlic, turmeric, ground red chillies, and salt while you prepare the sauce.

Step 2: The Sauce: In a pan, cook the chopped onion and tomatoes over medium heat until soft. Add crushed garlic, garam masala, chili powder, turmeric, and tomato paste, and cook until fragrant. 

Step 3: Blend the onion-tomato mixture until smooth, then set aside.

Step 4: In the same pan, heat the butter or ghee and add the marinated chicken. Cook until the chicken is ¾ done.

Step 5: Stir in the tomato-onion paste and continue cooking for another 10 minutes. If desired, add 1 cup of fresh cream for a richer flavor.

Step 6: Finish with fresh coriander on top.
